Southern Shepherd's Pie

A new meal is hitting the Cafe this week and I think you're going to love it! There is a little history to how this recipe evolved.
Back in my younger days, I took a trip with my parents and oldest sister to England and Wales. We toured the cities and countryside, staying in B&Bs and sampling the English fare (which I know the British are not known for). However, we stumbled across some of the most delicious Shepherd's Pie I think I've ever tasted while we were in the Lake District, near Dove Cottage, where William Wordsworth lived and wrote several of his poems.
I have fond memories of that trip and will never forget the cozy, warm Shepherd's Pie we enjoyed on a cool summer's evening. Putting my own spin on the casserole, I've incorporated that same flavor to create a hearty dish I hope you and your family enjoy. The "Southern Shepherd's Pie" is a savory mixture of sautéed onions, ground beef, and cremini mushrooms prepared in a wholesome sauce. Added texture is provided by tender green beans, corn, peas, and carrots. All blanketed with a layer of shredded cheese and a hash brown topping, which is crisped up with help from the broiler.
January is the perfect time of year for this cozy casserole and a super easy solution to the question of what's for dinner!
